Sandesh: Craft This Bengali Delight for Sweet Pujo Celebration

Sandesh is a quintessential Bengali sweet that holds a special place during festivals like Durga Pujo. It’s a simple yet delicious dessert made primarily from paneer (chhena), sugar, and cardamom.

Prepare the Paneer (Chhena)

If making paneer at home, heat 1 litre of milk and curdle it by adding lemon juice or vinegar. Once the milk separates, strain the chhena in a muslin cloth, rinse with cold water, and squeeze out the excess water. Hang it for 30 minutes to remove moisture.

Knead the Chhena

Transfer the chhena onto a flat surface or plate. Using the palm of your hand, knead the chhena for 8-10 minutes until it becomes smooth and soft without any lumps. It should form a dough-like consistency.

Cook the Mixture

In a non-stick pan, add the kneaded chhena and cook on low heat. After a minute, add the powdered sugar and cardamom powder. Stir constantly. Cook until the mixture starts to leave the sides of the pan (around 5-7 minutes).

Shape the Sandesh

Let the mixture cool slightly. Once cool enough to handle, take small portions and shape them into flat round discs or small balls. You can use moulds to give them traditional designs. Garnish with saffron strands or chopped nuts.

Chill and Serve

Refrigerate the Sandesh for about 30 minutes to set. Serve chilled or at room temperature for a delightful end to your Pujo feast!
