Kerala Puttu For Dessert

Kerala puttu is a go-to breakfast food and this version make in a coconut shell, with the sweetness of millet and the health benefits of ragi is perfect to eat as a nourishing breakfast or a dessert.

Ingredients

1 cup Ragi Flour, 1/2 cup Water, Salt (as required), 1/2 cup Grated Coconut, 1 Banana (sliced), Jaggery (optional)

Step 1

In a bowl, combine 1/2 cup grated coconut with 1 chopped banana. Mix well to ensure the banana is well coated with the coconut. Add jaggery for extra sweetness if needed.

Step 2

In a separate bowl, add 1 cup ragi flour and salt to taste. Gradually sprinkle 1/4 cup of water in batches, mixing continuously.

Step 3

The flour should become slightly moist but not too wet or dry. To check, press a handful of flour in your fist; if it holds shape, it's ready.

Step 4

Begin by placing a layer of the coconut-banana mixture at the bottom of the puttu maker or pack into a coconut shell.

Step 5

Then, fill the remaining space with ragi flour, without pressing it down. Top with the remaining banana-coconut mixture. Secure the lid on the puttu maker.

Step 6

Fill a pressure cooker with 1 cup of water. Place the puttu maker on the steam vent after removing the whistle. Steam on high flame for 5 minutes. Be careful not to over-steam, as this may dry out the puttu.

After 5 minutes, remove from heat and carefully flip the puttu maker over a banana leaf or serving plate. Serve hot with extra banana slices and papad.
