Whole moong dal (split green gram), wheat flour, finely chopped onions, green chillies, ginger, fresh coriander leaves and spices like cumin and salt.
Soak moong dal for a few hours. After soaking, drain and cook it in a pot with water until soft. Once cooked, drain any excess water and mash the dal lightly.
In a pan, heat some oil and saute chopped onions, green chillies, and grated ginger until soft. Add the cooked moong dal, followed by garam masala, and salt. Cook for a few minutes and let the mixture cool.
In a bowl, mix wheat flour with a little water and salt to make a soft dough. Roll the dough into small circles. Place a spoonful of the moong dal filling in the centre, then fold the edges over to seal it, forming a pouch.
Heat a tawa (griddle) and slightly flatten each filled dough piece. Cook until golden brown on both sides, using ghee or oil as needed. Serve with yoghurt, pickle, or chutney and Enjoy your warm moong dal parathas.
