Andhra-Style Palli Podi is a flavourful peanut chutney powder made with roasted peanuts, red chillies, and aromatic spices. It's perfect as a side for dosa or to mix with hot rice and ghee for a simple, delicious meal.

Ingredients

1 cup Peanuts, 14 Dried Red Chillies, 1 tsp Cumin Seeds, 1 tbsp Coriander Seeds, 1 tbsp Bengal Gram (Chana Dal), 2 Garlic Cloves, 1 tbsp Grated Coconut, 1 sprig Curry Leaves

Step 1

Dry roast the peanuts on a low flame for a few minutes. Allow them to cool, then remove the skins.

Step 2

Roast the dried red chillies, cumin seeds, bengal gram, and coriander seeds on a low flame for a few minutes.

Step 3

Lightly roast the grated coconut on a low flame until it turns light brown.

Step 4

Lightly roast the curry leaves and garlic cloves. Spread all roasted ingredients on a plate and let them cool completely.

Transfer all ingredients to a food processor and grind to form a coarse powder.

Spread the ground powder on a plate and allow it to cool for 10 minutes.
