Heat some oil or ghee in a pot. Add grated ginger and chopped garlic and cook until they’re fragrant and soft.
Add some chopped onions, peas, carrots, spinach, beans, cabbage and sweet corn. Stir-fry them for about five minutes
Add four cups of water, and stir everything together. Season with salt and pepper to taste.
In a small bowl, mix ragi flour with a little water until it forms a smooth paste.
Bring the soup to a boil, then slowly add the ragi slurry. Stir well and let it cook for four to five minutes. Finish with a squeeze of lemon and garnish with coriander leaves. Enjoy your ragi soup.
