Sohan Halwa is a rich and flavourful dessert that’s comforting and indulgent. With just a few ingredients and simple steps, you can make this classic sweet at home. Here’s how:
In a bowl, mix 1 cup of cornflour with 1 cup of milk. Set aside. In a heavy-bottomed pan, combine sugar and water. Cook the mixture on medium heat until it reaches a one-string consistency.
To prevent lumps, gradually add the prepared cornflour mixture to the syrup while stirring continuously. To make sure the halwa absorbs the ghee, add it in small amounts and mix thoroughly after each addition.
Mix in saffron strands and cardamom powder. Continue to cook the halwa, stirring occasionally, until it thickens to a smooth consistency.
Stir in chopped almonds and pistachios. Mix well, allowing the nuts to distribute throughout the halwa evenly.
Pour the mixture into a greased tray, spreading it evenly. Let it cool and set before cutting into squares or pieces.
